Cambridge Distillery, located in Cambridge, Waikato, produces premium, small-batch gin inspired by the lush landscapes and gardens of its hometown. Founded by James Coote and Will Rendell, the distillery started with humble beginnings in a home setup, eventually expanding to a dedicated facility that now includes a public tasting room. Their signature gin, Knocknaveagh, named after Coote’s ancestral Irish farm, combines traditional botanicals like juniper, angelica, and coriander with unique New Zealand flavors such as grapefruit and Douglas fir, creating a spirit that’s both refreshing and complex.
